BARBEQUE SOP 


Barbeque Sop (also referred to in some circles as BBQ Mop) is used throughout the cooking process to keep meat moist and embark a rich brown color to the outside of the meat. Since we all know that barbeque is not cooked directly over the coals, the meat must have a little time to 'set' the Special Shit All Purpose Seasoning.

Since we all know that barbeque is not cooked directly over the coals, the meat must have a little time to 'set' the Special Shit (or other Shit) so the Sop doesn't wash the seasoning off the meat. Sprinkle meat generously with Special Shit and place on the grill. After a few minutes (15-30 minutes) on each side the Sop should be 'mopped' on the meat every 20-30 minutes (I literally use a small kitchen mop to transfer liquid to the meat) to keep meat moist and tender. For small meat items like chicken quarters, they can just be immersed in Sop liquid.

Ingredients:

  • 3 cups water

  • 2 Tbs Special Shit or Aw Shit Seasoing 

  • 1 onion (cut in large chunks)

  • 2-3 Jalapenos (cut in half lengthwise)

  • 1 stick butter or margarine

  • 1/2 cup Worcestershire Sauce

  • 1/2 cup Soy Sauce

  • 4-5 cups of distilled white vinegar

Begin by combining water, Special Shit, onion, and jalapenos in a saucepan. Bring to a boil and cook until onions are translucent. Add the butter and continue cooking for 3 minutes. Add the Worcestershire Sauce and Soy Sauce and bring back to a boil. Turn off the heat and add 4-5 cups of white vinegar. Ingredients don't have to be exact. If you want to experiment with some beer in the Sop, put it in. Same with other ingredients. The key is the vinegar; it helps the meat absorb the flavors of the Sop so make sure about half of the mixture is vinegar.

DEVILED EGGS 


These deviled eggs would make Satan proud. Their utter simplicity is what makes them so appealing. You will immediately taste the sweet and salty goodness of the Good Shit Sweet n' Salty Seasoning and then, with the subtleness of a Mack Truck, the Hot and Spicy finish of the Aw Shit Hot n' Spicy Seasoning is enjoyed.

This Disparity of flavors works in perfect harmony to provide a most unique culinary experience.

Ingredients:

  • 6 Hard Boiled Eggs

  • 4 Tbs Miracle Whip

  • 1 Tbs Sweet Pickle Relish

  • 1/2 Tsp Good Shit 

  • 1/2- 1 Tsp Aw Shit

Begin by boiling the eggs in a pot of water for about ten minutes. Allow them to cool to at least room temperature ( put them in COLD water ) and peel. 

Cut in half lengthwise and place the yolks in a suitable size bowl. With a fork, mash them till most of the big chunks are gone. Add all the Pickle relish, Good Shit, and 3 Tbs of the Miracle Whip. Combine and check the consistency. 

Decide now whether to add the remaining Miracle Whip (depending on your personal preferences...yes, you may taste it now). 

Fill the white part of the eggs to slightly more than full with a spoon. Sprinkle the Aw Shit on the top of the yolk mixture. Use your personal preference as to how much Aw Shit to use. 

I would sprinkle the tops with a little Aw Shit, taste one and decide how much to use for the entire platter. Or, put a little on some and a lot on others and let your guests decide.

POT ROAST

One of our winter time favorites at Big Cock Ranch.  You can make this recipe using either our Special Shit All Purpose Seasoning or using the unique flavor of the Good Shit Sweet and Salty Seasoning.  Either one will produce a terrific tasting meal you will be proud to serve your family or friends.  Try this recipe

Ingredients: 

  • 1 pot roast, lean chuck, rump, etc., about 3 to 4 pounds 

  • 2 tablespoons oil 

  • 1 can (10 3/4 ounces) cream of mushroom soup, undiluted 

  • 1 envelope dry onion soup mix 

  • 1 cup water, divided 

  • 6 medium potatoes, peeled and quartered 

  • 6 carrots, sliced in 2" pieces 

  • Special Shit All Purpose Seasoning (or Good Shit Sweet and Salty Seasoning) to taste – about 1 tbsp 

  • 2 tablespoons flour mixed with 1/4 cup cold water 

In a large pan, brown roast in oil; remove roast and set aside. Pour off excess oil. In the same pan, combine mushroom soup, onion soup mix, and 1 cup water.  Heat to boiling. Return roast to pan. Reduce heat to low. Cover and simmer for 2 hours, turning roast occasionally. Add potatoes and carrots. 

Cover and cook for another 40 minutes, or until vegetables are tender. Season with your choice of Good Shit or Special Shit. Remove meat and vegetables to serving platter. Gradually stir the flour and water mixture into the sauce in pan, stirring until sauce boils and thickens. Serve thickened sauce over roast and potatoes. Serves 6 to 8.
